Week 2 Meal Prep Wrap-Up: Real Life Proof It Works

If there was ever a week that tested whether all this meal prepping was worth it, week two was the one. We had appointments three out of five days, and two of those had us gone for over three hours at a time. One day even turned into a surprise five-hour adventure that I didn’t see coming (because life never asks before it throws curveballs, right?).

But here’s the thing—no one was stressed, no one was starving, and there were zero meltdowns over food. That’s because we had snacks, breakfasts, and lunches ready to grab and pack. Muffins and egg bites went into little containers before we headed out, DIY lunchables with fruit and veggies made lunch easy in the car, and pretzels or yogurt cups held us over until we got back home. I can’t even tell you how good it felt not to be sitting in the waiting room with kids asking “when are we eating?” on repeat.

In the past, weeks like this would’ve meant drive-thrus, overpriced snacks at gas stations, or coming home completely drained with nothing ready for dinner. This week, though, the extra time I spent on Sunday meal prepping saved us in the long run. We ate better, spent less, and I didn’t feel like I was constantly behind.

Was it still a crazy week? Absolutely. But the difference was huge—I felt prepared, not panicked. Instead of rushing or stressing, we just grabbed what we needed and kept moving. And honestly, that peace of mind alone made meal prepping worth it.

So, week two taught me this: life is always going to be busy, unpredictable, and messy—but having food prepped ahead gives me one less thing to worry about. And around here, that’s a win I’ll take every single time.

Looking ahead to week three… we’re rolling into it a little less prepared. The meal plan is made, but thanks to a run-in with an insect (I thought it was a bee—and since I’m allergic, I panicked a bit), I ended up taking Benadryl which put an early end to my prep day. So, I’ll be finishing things up today instead—and honestly, I’m turning it into a homeschool lesson. Cooking together in the kitchen counts as school in our house, and the kids love it. So while it didn’t go as smoothly as I hoped, we’ll still get it done, just with a little extra teamwork this week.
