Day 2: Flexibility Over Perfection
If I’ve learned anything on this meal plan journey so far, it’s this: real life doesn’t care about your perfectly laid-out plans.
Today threw us a little curveball. It started raining, and because we don’t have a carport (yet), we had to pack up everything—lunch, schoolwork, kids—and head to a friend’s house to get our windshield replaced. Not exactly how I pictured the day going… but hey, this is why we homeschool and meal plan.
Breakfast – Still on Track
Breakfast was a win: yogurt parfaits with home-canned peaches and granola.
No cooking, no cleanup stress, and it filled everyone up before the busy day kicked in.
Lunch – Pivoting With Purpose
Originally, lunch was supposed to be mini quesadillas, but with everything happening, we had to be out the door fast. Thanks to Sunday’s prep, we had meal-prepped uncrustables, orange slices, and crackers ready to go. We packed them up and took school with us—another perk of homeschooling that I’ll never take for granted.
And no, nothing went to waste. We simply swapped today’s lunch with another day this week. Everything still gets eaten. Nothing lost.
Dinner – A Pantry Garden Win
By dinner time, we were home and ready for something comforting. I made spaghetti mac using our home-canned tomato sauce—the one I made with garden-grown tomatoes. It was quick, hearty, and exactly what we needed after a wet, off-routine kind of day.
Reflections from Day 2
Today wasn’t perfect, but it was flexible.
And that’s something I’m learning to value just as much as structure.
The old me would’ve used a day like this to derail the plan entirely. But this time, having meals prepped and a plan written out actually made it easier to roll with the interruptions.
✅ We still ate at home.
✅ We used what we had.
✅ We stayed on budget.
✅ We didn’t waste anything.
So here’s to day two—not perfect, but fruitful in its own way.
